Taco Green-Go is the brain child of Chef
Jenny and G.M. Michael DuBay. Incorporated in
March of 2013 we first opened our window October 3rd
2013. Since our inception we have grown into one of the
premier taco trucks in North Carolina. Offering a seamless
blend of Mexican, Island and Southern cuisine Taco
Green-Go breathes new life into what food from a truck
Taco Green-Go operates out of Charlotte, NC. We are long time festival hippies who left the corporate world to follow our dreams of bringing fresh and healthy food to our friends on the road. All of our food is fresh and hand made with love. No freezers, cans, or microwaves. The style of food is called Floribbean, a type of Southern US/Island and Latin Fusion. The menu is interesting and exotic with a comfortable and approachable feel. We do offer vegan, vegetarian, and gluten free options as well.
We call ourselves, The Eco-Friendly Food Truck. The truck was built by the owners and hand painted by a local artist. Positive energy and community support are the cornerstones of our philosophy. Therefore, local sourcing of ingredients, recycled paper products, plant based plastics, natural gas, LED lighting, commercial grade insulation, bio-degradable detergents, and composting are just a few ways we provide healthy, sustainable, cost conscious food choices that support the eclectic and unique economic driving force of our community.
Chef Jenny began her culinary journey at the age of 14 when she started working in
her first kitchen. During this time she also learned Southern cuisine
from her Grandmother Josey and Jewish cuisine from her
Step-Grand mother Grace. After making a move to Florida, Jenny
attended The Art Institute of Tampa’s culinary program. While
there she interned at The Don Cesar in Saint Petersburg, FL and the
5 star Sand Pearl Resort in Clearwater, FL where she had
individual instruction in meat and fish processing, sushi design
and wine pairing. Prior to exiting AI, Jennifer finished 2nd in
the school's Bar-B-Que competition.
Jenny completed her degree at Johnson and Wales University in
Charlotte in 2010 graduating Summa Cum Laude. While attending
JWU, she interned at Apple Orchard Farms to learn about sustainability and organic food production. Also while at JWU, she worked under Chef David Thomas at Childress Vineyards, wherein she published her first menu and performed personal chef responsibilities for Richard Childress as well as several of his NASCAR drivers.
Chef Jenny received her first Chef position working at the prestigious George’s Brassiere on Piedmont Row as the Raw Bar Chef. Jennifer there earned a following for her diverse and interesting interpretation of ceviche. From there she continued on to the Marriott’s Savannah Red breathing new life into Center City’s fine Southern cuisine restaurant as their lead chef. Chef Jenny's joy de vivre and infectious smile are hard to deny.
GM & Owner Michael DuBay, a serial entrepreneur, started his
first business at the age of 12 opening a baseball card booth at his local flea
market in Summerville, SC. After high school Michael served in the United
States Air Force wherein he was awarded the Honor Graduate Ribbon from
Basic Military Training. Serving in the military and troubleshooting the B1B
Bomber would instill integrity, a solid work ethic and discipline thereby
preparing him for life’s hurdles. After successfully completing his initial
enlistment Michael worked and started businesses in both corporate finance
and real estate over the next 10 years honing his business management and
administration skills. Michael completed the Business Administration with
a concentration in Entrepreneurship program at Central Piedmont
Community College in 2012 rounding out his skill set. An avid health and
fitness enthusiast Michael has the energy that allows people around him to
plugin and recharge.
Taco Green-Go was built not bought. Michael turned every wrench while Jennifer wrote every recipe while both working full time. It may have taken them close to a year to complete, but if you ask them the joy of creating something out of nothing is greater than you can imagine. Taco Green-Go just celebrated their 3 year anniversary.
